Whether its a long day at school, work or if it's for a sporting event, these pancakes will do the job in fueling you! This is the simple one cup scotch pancake recipe done my way, I use wholemeal flower as well as hemp seeds and peanut butter for protein with the added slow releasing energy of honey and banana.
For the pancakes:
1 free range egg
1 cup of plain wholemeal flour
1 cup of milk ( I use soya or almond)
1 teaspoon baking powder
Sea salt
Olive oil (for frying)
2 tbsp hemp seeds (I used a cocoa and hemp mix)
Mix all the ingredients listed above together and fry as normal, flipping them when the top starts to bubble.
For the toppings:
Banana
Honey (manuka if possible)
crunchy organic peanut butter
After they are cooked, spread a layer of peanut butter on each one and place slices of banana on top, layer them up as shown in the picture and drizzle with honey.
