As I start to post, you may learn something about me and that is that unless baking i usually do not rely on exact measurements, I trust my senses in that way to know how it should look, smell and taste. Hopefully you will learn this too. The food I make is generally simple and generally not very time consuming, after all who has the time?
The first recipe I'm going to post is for a healthy coleslaw, this can be eaten with salads or sandwiches but I served it with a baked sweet potato. Its healthy, low in fat and really tasty!
1 carrot grated
1/3 cabbage shredded
1/2 red onion finely chopped
1 tbsp low fat mayo
plain yogurt 100ml+(enough to cover)
1 tsp wholegrain mustard
2 handfuls of raisins
(optional) A handful of your favourite nuts or seeds
Mix all together with a good coating of yogurt and serve how you like. Enjoy :)
