Mini Oven-baked Omlettes (Vegetarian)

This recipe is not only tasty but perfectly convenient for those in a rush as it can be cooked ahead of time and enjoyed later. You will need a deep fill muffin tray to cook and this recipe makes 9 mini omlettes :)
Ingredients:
5 eggs
100ml milk
30g grated mature cheddar
4 closed cup mushrooms, chopped
1/4 broccoli head, chopped into small pieces
1 medium potato, cut into 1cm cubes
1/2 cup sweetcorn
1 tsp oregano
1/4 tsp salt and pepper
Cooking spray/butter
Method:
1.Preheat the oven to 180℃ and grease the muffin tray.
2.Add the eggs and milk into a bowl and whisk until combined well.
3.Stir in the rest of the ingredients with the egg and measure out equally into the muffin tray.
4.Bake in the oven for 20-25 minutes until cooked all the way through.
5.Serve up as breakfast, lunch or dinner and enjoy! Cassidy xx
6. This can be enjoyed on it's own, with some baked beans or even in an English muffin, you decide!
