They finally sell Wholegrain couscous and it doesn't tast any different but is obviously a lot higher in fiber. The tofu I used was a new Caldron product which is organic and a lot firmer than the original tofu they sell. The great thing about dishes like this is you can add any veg you have and it will still taste great :)
Ingredients:
2 cups couscous
1 block smoked tofu, pressed and cut into cubes
3 mushrooms, chopped
3 baby courgettes, chopped
1 cup sweetcorn
1 cup kale, chopped
4 cups boiled water
1 veggie stock cube
4 tbsp lemon juice
4 tbsp soy sauce
4 tbsp balsamic vinegar
1 tbsp oil
2 cups couscous

Method:
1.Heat up the oil in a pan and fry off the tofu until it starts to brown, add in the veg with half the lemon juice, soy sauce and balsamic vinegar and cook for 5 more mins.
2. Place the cous cous in a bowl and pour over boiling water, add in the stock cube and the rest of the flavourings, stir with a fork and leave to rest for 5-10 mins.
3. Stir the veg and tofu into the couscous, serve up and enjoy! Cassidy xx
