Tofu is one of those things that most people start out not liking but then discover new ways of flavouring and cooking it and it turns into something really enjoyable. This is Ginger Pineapple tofu, yet another great way I've found to flavour it and it was delicious! This recipe makes 2 servings.
You'll need:

Ingredients:
1/2 block tofu, drained and cut into squares
1/2 medium sized pineapple, chopped
3 tbsp soy sauce
1/2 inch ginger
1 tsp chopped chili
150g wholegrain rice
10 asparagus tips, chopped
1/2 courgette, thinly cut into sticks
1/2 cup sweetcorn
1/2 block tofu, drained and cut into squares
1/2 medium sized pineapple, chopped
3 tbsp soy sauce
1/2 inch ginger
1 tsp chopped chili
150g wholegrain rice
10 asparagus tips, chopped
1/2 courgette, thinly cut into sticks

Method:
1. Steam the rice for 25 minutes.
2. Blend up 1/4 of a pineapple with the ginger, soy sauce & chili and pour 2/3 over the tofu.
3. Fry off the tofu in a non-stick pan until the sauce is reduced.
4. With 5 minutes left on the rice, add the vegetables and the other 1/4 pineapple to the steamer.
5. Add the veg & rice to another pan and pour over the remaining sauce, stir through, gently heating the sauce until the rice is fully coated.
6. Serve up the rice, veg & tofu and enjoy! Cassidy xx
