It's not very often that I have pancakes and even on pancake day I made English ones rather than the thicker scotch ones so I thought it would be a nice treat, especially as my breakfast is usually fruit or a smoothie! These are wholemeal pancakes, with no dairy and no refined sugar but plenty of taste and best of all, the pancakes themseleves have 3 simple ingredients so they can't go wrong!
You'll need:
1 frying pan

1 saucepan
wooden spoon

Ingredients:
1 cup wholemeal flour
1 cup soy/ almond milk
1 large egg
1/2 cup frozen berries
1 tsp vanilla extract
1 tbsp peanut butter
1 tbsp manuka honey (or any other honey)

Method:
1. Place the frozen berries in the saucepan on a low heat with the vanilla extract and leave to heat gently.
2.Whisk together the flour, milk and egg in a bowl untill smooth
3. Spray some oil in the pan and turn it up to a high heat, ladle in some of the pancake mixture and leave until bubbles start appearing on the top, then flip the pancake and leave to cook up to another minute.
4. Serve by stacking the pancakes up, with peanut butter on the top layer, pour the berries over and finally top with a spoon of manuka honey, enjoy! Cassidy xx
