I'm back in the UK now and certainly had the trip of a lifetime! These drinks were made on our final night of the holiday, we had a big meal and celebrated our amazing time with some cocktails and our new friends. These are made with fresh fruit juice and are a healthier way to enjoy alcohol. I made a watermelon-lime juice and a pina-colada which can either be served with vodka or rum. If you do not have a juicer then you can blend the fruits and strain to get a smoother texture. These cocktails are very simple and easy to make but the perfect accompaniments to dinner!
Ingredients:
1/2 large watermelon, juiced
2 small/ 1 large lime, squeezed
1/2 large watermelon, juiced
2 small/ 1 large lime, squeezed
1 pineapple, juiced
Water from 2 young coconuts
Water from 2 young coconuts
Vodka & Ice (To serve)
Method:
Mix the watermelon and lime juice together and serve over ice with vodka & in a separate pitcher mix the pineapple juice and coconut water together, then serve over ice with either vodka or rum - or simply enjoy the juices without any alcohol for a mocktail! Cassidy xx
