Spicy Cauliflower bites & Peanut Sauce
I got the inspiration for this recipe from the thug kitchen cookbook I got for Christmas, I switched it up by making my own spicy coating (rather than using hot sauce) and I also used my peanut sauce recipe, which I've used in tofu, noodle and kale chips recipes in the past, it's so delicious and pairs beautifully with these spicy cauliflower bites. I have so many recipe books (only a few collected since being vegan) and whilst I find that the recipes sound delicious, I always come up a bit disappointed at the end result. I've since learnt to follow my instincts in cooking, especially if I use a recipe as rough guide, whether it be the amount of seasonings used or the cooking times; however most of the time I make up recipe quantities from scratch, by experimenting in the kitchen until I'm satisfied with the flavours. That’s what I love about cooking; the times when I’m able to just  be in the kitchen,  trying out new combinations and seeing how the end product turns out, the days when you have an unlimited amount of time to cook are the best ones and any stress just melts away.
  
Spicy Cauliflower Bites & Peanut Sauce
Recipes like this are a great example of the many great things you can do with fresh veg, ideal for hot summer days when you want a light, healthy and delicious snack. To start off this recipe you coat the cauliflower in batter, cook in the oven and then a few minutes before the end, coat in the hot sauce and return to the oven. These bites would also make a great addition to a BBQ; simply cook them in the oven for 15 minutes, then coat in the hot sauce and finish them off on the BBQ, for that slightly charred flavour.
Spicy Cauliflower Bites

You'll need:


  • Chopping board
  • Knife
  • Large mixing bowl
  • Baking Tray
  • Greaseproof paper
  • Whisk

Ingredients:


  • 1 large head cauliflower
  • 1/3 cup plain flour (I used wholemeal)
  • 1/3 cup + 1 tbsp water

Spicy Sauce:

  • 3 tbsp rice vinegar
  • 1 tbsp tomato puree 
  • 1 tbsp soy sauce
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1/2 tsp chili flakes

Peanut Dipping Sauce:

  • 1 heaped tbsp crunchy peanut butter
  • 1 tbsp soy sauce
  • 3 tbsp lemon juice (1/2 lemon)
  • 1 tbsp water
  • 2 tsp sugar 


Method:

  1. Pre-heat the oven to 200 C and line a baking tray with greaseproof paper.
  2. Whisk up the flour and water in a large bowl until completely smooth. Then cut the cauliflower into florets, add to the bowl and coat in the mixture. Transfer to a baking tray for 15 minutes, turning half way through.
  3. To make the peanut dipping sauce, whisk all the ingredients together until combined and place to one side.
  4. Mix the spicy sauce ingredients together and place in a bowl. Transfer the cooked cauliflower pieces back into the bowl, coat fully and return to the baking tray for another 5 minutes in the oven (or do this stage on a BBQ). 
  5. Serve up as a side dish/ snack and enjoy! Cassidy xx
