Chocolate Hazelnut Buckwheat Granola


Chocolate Hazelnut Buckwheat Granola, or if I'm being more accurate, double-chocolate hazelnut buckwheat granola. It's a wonder how something packed with such nutritious ingredients can taste this incredible, but it really does. I packed this granola full of delicious ingredients like hazelnut butter, mulberries, cocao nibs, cocao powder, plus a few more.


I've wanted to make buckwheat granola since I came back from Slovenia and I finally decided on what flavour I was going to make - this granola may seem like it has a lot of 'fancy' ingredients, but I based it on all my favourite things at the moment and if you know where to get the items cheapest, it will cost a lot less!  I've recently discovered cocoa nibs really cheap in aldi and I bought the mulberries at half price in a health-food shop, but you could always use dark chocolate chunks and raisins instead.


Most granola recipes use oil and some sort of syrup to stick them together, I had date syrup on hand so I used this, I really like the flavour and I also used hazelnut butter, so it has a little more nutrition than plain oil and it tastes incredible too! Any syrup or nut butter would work in this recipe, so make it your own and use your favourite! If you require a gluten free granola, simply use certified gluten free oats. Serve this granola up on a smoothie bowl, with vegan yogurt and fruit or even with some non-dairy milk, however you enjoy this delicious recipe, it's bound to quickly become a breakfast favourite!


Despite it's name, buckwheat isn't a grain at all, but it's actually a fruit seed and therefore naturally gluten free. It's also high in protein, magnesium, iron and potassium, a great nutritious ingredient to start your day with. Oats are also a great source of fibre, protein and many other nutrients, including beta-glucan, which is excellent for heart health. Cocao nibs and powder are excellent sources of iron, fibre and antioxidants, whilst the chia seeds are a great source of short chain omega 3 fats, protein and fibre.  Hazelnuts contain a supply of good fats as well as many vitamins and minerals, mulberries are also rich in nutrients, whilst providing a satisfyingly chewy texture to the otherwise crunchy granola. Basically, this granola is a nutrient powerhouse and is super delicious too; what more could you want out of a breakfast cereal?!

Chocolate Hazelnut Buckwheat Granola | Yield: 6 cups | Time: 20 mins

You'll need

  • Measuring cups
  • Large baking tray + grease-proof paper
  • Wooden spoon/spatula
  • 1.5L jar/storage container

Ingredients

  • 1.5 cups whole rolled oats (gf if needed)
  • 3/4 cup buckwheat 
  • 1/2 cup dried mulberries (can sub for other dried fruit)
  • 1/4 cup cocao nibs 
  • 1/4 cup cocao powder
  • 2 tbsp chia seeds 
  • 4 tbsp date syrup (can use maple or agave)
  • 2 heaped tbsp hazelnut butter (or any other nut/seed butter)

Method

  1. Pre-heat the oven to 170°C and line a large baking tray with grease-proof paper. 
  2. Combine the oats, buckwheat, mulberries, cocoa nibs, cocoa powder and chia seeds in a bowl, then mix in the date syrup and hazelnut butter and mix well. Spread out the mix evenly on a baking tray and bake for around 8 minutes, keeping a close eye on it so it doesn't burn.
  3. Let it cool thoroughly and store in an air tight container (it should fit in a 1.5L jar). Serve up on a smoothie bowl, with some vegan yogurt and fruit or even with some non-dairy milk and enjoy!
