Vegan Pumpkin Spice Pancakes


Vegan pumpkin spice pancakes, served with pecans and maple syrup. Fluffy, seasonal and a great weekend breakfast or brunch treat!


These pancakes are super easy to make, simply mix the wet ingredients - including pumpkin puree, stir in the flour and baking powder and then simply cook your pancakes. You'll want a non-stick or well-seasoned cast iron pan for these. Then serve up with a good drizzle of maple syrup, handful of pecans and a sprinkling of cinnamon. 
 

These pancakes aren't too sweet either, with a lovely spiced flavour for that cosy autumn feel. This makes it easy for each person to adjust to their liking with the addition of maple syrup at the table. The nuts add a lovely flavour, as well as containing good fats and helping to control your blood sugar a little.

Vegan Pumpkin Spiced Pancakes | Makes: 6-8 pancakes | Time: 30 mins


You'll need

  • Mixing bowl
  • Whisk
  • Measuring cups & spoons
  • Non-stick / seasoned cast iron pan
  • Spatula
  • Oil for greasing

Ingredients

  • 1/2 cup pumpkin puree
  • 1/2 cup oat milk
  • 3 tbsp neutral oil
  • 2 tbsp maple syrup
  • 2 tbsp ground flaxseed
  • 1 tsp vanilla extract
  • 2 tsp mixed spice
  • 1/2 tsp cinnamon
  • Pinch salt
  • 1 cup plain flour
  • 1.5 tsp baking powder

To serve:

  • 1/3 cup pecans
  • Maple syrup
  • Sprinkling cinnamon

Method

  1. Mix together the pumpkin puree, oat milk, oil, maple syrup, flaxseed, vanilla, mixed spice, cinnamon and salt in a bowl.
  2. Add in the flour and baking powder and gently whisk in. 
  3. Heat a non-stick or cast iron pan on a low-medium heat and grease lightly with oil. Use a 1/4 cup measure to add the mixture to the pan, cook until bubbles have formed and the top has mostly dried out, then flip and cook for a few minutes on the other side. 
  4. Cook in batches as required - if you're going to serve all your pancakes at the same time, pop them on a baking tray in a low oven to keep warm whilst you cook the rest. 
  5. Serve up your pancakes with a handful pecans, a drizzle of maple syrup and a sprinkling of cinnamon and enjoy!
