Vegan Bacon & Sprouts Farfalle | Serves: 4 | Time: 15 mins
You'll need
- Frying pan/cast iron
- Spatula
- Saucepan
- Chopping board
- Knife
- Colander
- Ladle
Ingredients
- Splash oil
- 120g vegan bacon (I used This)
- 1 stalk Brussels sprouts
- 3 cloves garlic
- Heaped tsp wholegrain mustard
- 200g vegan creme fraiche (I used Oatly)
- 250g farfalle pasta
- Handful chives, chopped
- Salt & pepper
Method
- Bring a large pan of well-salted water to the boil.
- Chop the bacon into pieces, heat the pan on a medium-high heat, add a splash of oil and cook the bacon until slightly crisp.
- Add your pasta to the boiling water and cook until al dente.
- Remove the sprouts from the stalk and wash them, then slice into thin pieces. Add to the pan and cook for 5-7 mins until tender and slightly charred. Mince the garlic, reduce the heat, add to the pan and cook for a few mins.
- Then add the mustard and creme fraiche and stir through. Add in a ladle of pasta water (1/2 cup), drain the pasta and add to the pan. Stir together well, season generously with black pepper and top with your chives.
- Serve up and enjoy!
