Overnight oats are the perfect make-ahead breakfast, ready to grab and go during busy mornings. These are inspired by carrot cake, with apple and raisins for sweetness, walnuts and pumpkin seeds for crunch and spices for that authentic carrot cake flavour.
Simply mix together, serve out into portions, top with Greek-style vegan yogurt and pop in the fridge for the simplest and most delicious breakfast the next day, and the next few days after that.

Carrot Cake Overnight Oats | Serves: 4 | Prep Time: 10 minutes
You'll need
- Grater
- Measuring cups and spoons
- Large mixing bowl and spoon
- 4x jars
Ingredients
- 1 large carrot
- 1 apple
- 1 cup oats
- 1/2 cup chopped walnuts
- 1/3 cup raisins
- 1/4 cup pumpkin seeds
- 1.5 tsp mixed spice
- 1.5 tsp cinnamon
- 2 cups soy milk
- Pinch salt
- 1 cup vegan Greek yogurt
Method
- Grate the carrot and apple and add to the mixing bowl along with the oats, walnuts, raisins, pumpkin seeds, mixed spice, cinnamon, soy milk and salt.
- Divide out into the jars, top with yogurt and store in the fridge overnight and up to 3 days and enjoy!
