Sambal Potatoes & Green Beans


Roasted turmeric potatoes and green beans, tossed in a tangy and bold tamarind sambal. A delicious side dish, perfectly paired with creamy satay tofu or aubergine for a contrasting flavour and texture.


The sambal uses a few pre-made ingredients like Indonesian-style chili paste, vegan fish sauce and lemongrass paste for an easy, no-cook sambal that comes together really easily. 


Simply dice up the potatoes, toss in a little tumeric, oil and salt and roast until crispy. Add in the beans in for the last few minutes and then mix up with the tangy sambal. Serve with some roasted peanuts, spring onions and fresh chilli, for a delicious side dish.

Sambal Potatoes & Green Beans | Serves: 4 | Time: 40 mins

You'll need

  • Roasting tray
  • Chopping board
  • Knife
  • Mixing bowl
  • Measuring spoons

Ingredients

Veg:
  • 500g starchy potatoes
  • 1-2 tbsp oil
  • 1/2 tsp ground turmeric
  • Pinch salt
  • 200g green beans
Sambal:
  • 2 tbsp chili paste (I used ready-made Sambal Oelek which is just chillies and vinegar)
  • 1.5 tbsp tamarind paste
  • 1 tbsp vegan fish sauce
  • 1 tbsp lemongrass paste
  • 2 tsp galangal paste
  • 1 clove minced garlic
  • 1-2 tsp brown or palm sugar, to taste
Garnish:
  • Roasted crushed peanuts
  • Spring onions, sliced
  • Fresh chilies, sliced

Method

  1. Pre-heat the oven to 220°C.
  2. Dice up the potatoes into ~1.5cm cubes, transfer to a baking tray and toss with a little oil, salt and turmeric. Roast for 20-25 minutes until golden, stirring around halfway.
  3. Meanwhile, remove the ends of the green beans and chop into 3. After the potatoes have been in for 20-25 minutes, add the green beans to the baking tray and cook for a further 5 minutes.
  4. Mix up the chilli paste, tamarind, vegan fish sauce, lemongrass, galangal, garlic and sugar in a bowl to make the sambal. Then toss in the cooked potatoes & green beans until evenly coated.
  5. Serve up with a garnish of roasted peanuts, spring onions and chilies, & along with your favourite accompaniments and enjoy!
